Homemade Mayonnaise

Recently, I have been trying to make as many things as I can at home, so I decided to try my hand at homemade mayonnaise. It was surprisingly simple, and quick to make, and it tasted delicious! I will definitely be adding this to my items to regularly make at home moving forward.

One of the perks of making mayo at home is that you can control the quality of the ingredients. Fresh lemon, farm fresh eggs and high quality ingredients make the creamiest and freshest mayo you may have ever tried, and as a bonus you can make this in under five minutes with ingredients that you probably already have in your kitchen. For the oil, you can use any oil of your choosing. Avocado oil is a great option for a healthier mayo, full of healthy fats.

What you will need: 

For this recipe you will need an immersion blender. I purchased a very inexpensive immersion blender on Amazon and it worked perfectly for this.

You will also need a jar or container that the immersion blender fits in, preferably, with a air tight lid so you can store the mayo in the same container that you make it in. The mayo should stay good in the refrigerator for around a week. You will want to use it within this time because this recipe does include raw eggs.

Ingredients: 

1 Egg

Pinch Salt to taste

1/4 tsp Dijon Mustard

1/2 tbs White Wine Vinegar

1/2 tbs Lemon Juice

1 Cup Oil of your choosing

Making the Mayo

Add all ingredients except for the oil into the jar or container of your choosing. Hold the immersion blender to the bottom of the jar while blending on high as you slowly pour in the oil. Keep the immersion blender on the bottom for about 20-25 seconds or until you start to see the mixture at the bottom of the jar emulsify and begin to look creamy like mayo. Once this happens Begin to slowly raise the immersion blender while still blending on high. Then move the immersion blender through the mixture until the whole mixture becomes a smooth and creamy consistency. As simply as that you have made homemade mayo!

Cover with an air tight lid, date, and store in the fridge for around 1 week.

Homemade mayo is a great base to many sauces or even marinades. One of my favorites, that I make frequently, is a cilantro lime aoli. This sauce is perfect on tacos, sandwiches, or really anything in need of a little extra sauce. This Aoli is as simple as making the mayo itself. Once you have your mayo base made all you have to do is add minced garlic, fresh cilantro, and lime juice, and you can bring this all together in your food processor to make a wonderfully fresh and light sauce! Some other sauces to try making with you homemade mayo base would be a honey mustard dipping sauce, ranch dressing, or add chipotle seasoning for a spicy mayo.
